I did say you should brace yourself for a roller coaster ride of flavours at Blackwattle because Wells will nudge you in many different directions with the arrival of each course.
For the 5-course set I had, suffice to say each course is consistently good. The techniques of preparation are modern and bold, and it is unlikely you will leave Blackwattle feeling disappointed.
The service for a new restaurant is impeccable. Kudos. In fact, the service was so good that we didn’t paying for $5/pax for Singapore’s already-filtered water filtered through the Norqac system.
