          Mandarin Grill’s reopening successfully introduces modern twists on Italian classics. Cacio e pepe with sea urchin deserves praise, as does the beef rending cappelletti, which adds local flair to the restaurant’s repertoire.

              If you could only order one item, go for the Ravioli Di Baccala – Chef Stinga’s specialty. The dish features cod fish, potatoes and oregano. The flaky texture of the fish disperses its sweet, natural taste with each bite, lovingly enveloped in ravioli which is cooked perfectly. My sample portion only had a few pieces; I wished there was more!

                My favourite dish of the afternoon was Chef Stinga's signature, the Ravioli di baccala. The handmade pasta pockets are filled with baccala (dried salted cod fish), and then topped with potato foam and breadcrumbs with parsley. Delicately delicious!

                  The award-winning Mandarin Grill welcomes a new Chef de Cuisine, Sebastian Barcudes. Hailing from Argentina, he brings with him 12-years of culinary experience as well as flavours of South America, which he deftly displays in the new a la carte menu at the restaurant. Barcudes started his career in a restaurant in Argentina and has worked in various restaurants in Middle East; most notably in Al-Muntaha Restaurant in Burj Al Arab, Dubai under the tutelage of Michelin-star Chef Bjorn Alexander Panek for three years. As Chef de Cuisine of Mandarin Grill, Barcudes' responsibilities include ensuring the highest quality of ingredients are used in his culinary creations while keeping the presentation unique and creative.

                    Reasons to visit: Exquisite and innovative flavours and wine pairings, a stunning setting and excellent service. Don’t miss the Burrata (for pure heaven be sure to pair it with the Chateau Ste Michelle Riesling), Parihuela and the Black Angus Beef Short Ribs (the pairing with Chateau Ferrande from Graves is also an excellent choice).
