Instead of gluten which is easier to work with, Xiang Yun uses soy pulp (豆渣). Although soy (黄豆) has significant amount of purine, soy pulp is relatively safe for consumption. Pound for pound, soy pulp has even lower purine content than red meat.
This is a place i would highly recommend to all veg and love-veg ppl. It's like a paradise. Plenty of choices, from food to beverages, appetisers, main course to desserts, tasty and inexpensive.
Chee Cheong Fun is also available from Xiang Yun. After nicely steamed, the rice dough is rolled to resemble pig intestines, then chopped to smaller rolls. Despite its plain look, I find the dish quite appetizing when consumed with the sweet sauce and generous garnishing of sesame seed.
Curry Mee is pretty delicious where the soup is rich in flavour and the side ingredients given is perfectly match with it.
