The broth of this prawn noodles really exhibited effort and was seriously 浓醇香 – layered, rounded and tasting both sweet and savoury with no msg. There was a thickness from the pork bones, umami from the prawn head, and an inviting fragrance from the fried shallots. The prawns were slightly tough, but tasted really sweet and flavourful. Very good.
