The stock, which was the heart of the pao fan, was seafoody and crustaceany without being overly rich. It thus retained a light and refreshing taste, on top of the unmistakable fact that this was a seafood soup. The addition of the rice crispies and fried egg added texture, flavour and some richness, and the lobster was quite good – clearly fresh since the meat was fall off the shell, sweet and tasty, and bouncy and qq.

I ate the bowl pretty quickly. The broth was silky and savory, and they loaded it up with lots of crispy rice to keep it exciting.
